Roughly 60 kilometers from the city of Copenhagen. Fruit-bearing berry bushes and potatoes of our own and a few easy to grow indoor herbs in the summer season. These are one of the few things that makes me and my husband Jacob the chance to be both creative and busy in our free time. <\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-vertically-aligned-top is-layout-flow wp-block-column-is-layout-flow\">\n<p style=\"font-size:18px\">We know that a good eco-system is as crucial as producing our basic needs. We might not be aware of it, probably because we think that we are getting what we need or maybe we are just settling for what we already have. All living organisms takes part in  <a href=\"https:\/\/mst.dk\/erhverv\/rig-natur\/naturen-i-danmark\/biodiversitet\/hvad-er-biodiversitet\">Biodiversity<\/a>. We planted some wild flowers in our garden. Having them helps in the pollination process. It takes three years to achieve the certification of a state authorized organic farming. Regular control of the authorities is conducted. Vivi and Henrik achieved the certification in 2023.<\/strong><\/p>\n<\/div><\/div>\n\n\n\n<p>On the 18th of September, I had the privilege of interviewing the couple Vivi Hjort Hansen and her husband Henrik in their farm in Herlufmagle, Denmark. They own a farm with 56 organic certified chickens with the race Isa Brown and Lohmann Lite. They get to walk all year round in a 5000 sq. meters orchard. They produces eggs that are organic. <\/p>\n\n\n\n<p>In 2021, I googled &#8220;g\u00e5rdbutikker&#8221; in our area and one of them is <a href=\"https:\/\/www.vivispryd.dk\/forside.html\"><strong>Vivi&#8217;s Pryd<\/strong><\/a>. Since then, our honey, concentrated fruit extracts (<em>saft<\/em>) for drinks and marmalade are exclusively bought in their shop. We also love their frozen berries, perfect for Elise&#8217;s and Josefina&#8217;s morning breakfast as toppings for their yoghurt.<\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" id\u00e9en om \u00f8kologisk landbrug og i hvilken omfang er opfyldelsen af dr\u00f8mmen p\u00e5virket jer at udvide de r\u00e5varer, som I har haft i forvejen?<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Vi havde en dr\u00f8m om at v\u00e6re selvforsynende, s\u00e5 da vi k\u00f8bte Tofteh\u00f8j, s\u00e5 vi en mulighed for at udleve dr\u00f8mmen. Vi har aldrig t\u00e6nkt at vi skulle spr\u00f8jte med gift eller bruge anden kemi, s\u00e5 \u00f8kologien er det naturlige valg for os. Vi s\u00e5 ogs\u00e5 en mulighed for at lave g\u00e5rdbutik og en dag kunne leve af at s\u00e6lge frugt og gr\u00f8nt. For at kunne markedsf\u00f8re \u00f8kologiske varer s\u00e5 skal man v\u00e6re certificeret \u00f8kolog, s\u00e5 vi omlagde til \u00f8kologi i 2020. Der g\u00e5r 3 \u00e5r f\u00f8r jorden er \u00f8kologisk. Da vi planlagde frugtplantagen valgte vi alle de frugter og b\u00e6r, som vi kendte, i forskellige sorter. Gennem de sidste 4 \u00e5r har vi udvidet med fx kv\u00e6de og havtorn.<\/li>\n<\/ul>\n\n\n\n<blockquote class=\"wp-block-quote has-text-align-center is-layout-flow wp-block-quote-is-layout-flow\">\n<p><strong>&#8220;For at kunne markedsf\u00f8re \u00f8kologiske varer s\u00e5 skal man v\u00e6re certificeret \u00f8kolog, s\u00e5 vi omlagde til \u00f8kologi i 2020. Det skulle vise sig at v\u00e6re sv\u00e6rere end som s\u00e5. Vi har nok taget meget jord ind til k\u00f8kkenhave, da vi ogs\u00e5 vil dyrke til salg i g\u00e5rdbutikken. Vi har l\u00e6rt meget i de sidste 4 \u00e5r. Markedsf\u00f8ringsm\u00e6ssigt er \u00f8-m\u00e6rket vigtigt og det at vi kan sige at vi er \u00f8kologiske med sikkerhed. Det er verificeret og kontrolleret af myndighederne. Grundet Vivis baggrund i Landbrugsstyrelsen har vi valgt ogs\u00e5 at s\u00f8ge landbrugsst\u00f8tte. Men for almindelige mennesker er det fint nok bare at t\u00e6nke \u00f8kologi. \u00d8kologi betyder for os ingen spr\u00f8jtegifte, ingen kemi og god dyrevelf\u00e6rd. N\u00e5r vi dyrker jorden er vi n\u00f8dt til ogs\u00e5 at t\u00e6nke p\u00e5 jordens fertilitet. Der skal ryddes for ukrudt, der skal g\u00f8des og der skal v\u00e6re vand nok. Man m\u00e5ler med et termometer. Jorden kan heller ikke v\u00e6re for v\u00e5d, s\u00e5 k\u00f8rer traktoren fast.<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>H\u00f8nsene er ude hele \u00e5ret, ogs\u00e5 i snevejr. H\u00f8nsene er faktisk skovh\u00f8ns og g\u00e5r inde i et lille stykke skov om vinteren, hvor de er beskyttet mod vejr og vind. K\u00e5l og rodfrugter kan st\u00e5 ind til frosten kommer. Man kan d\u00e6kke til med h\u00f8, man skal bare v\u00e6re opm\u00e6rksom p\u00e5 skadedyr, som snegle, der ogs\u00e5 gerne vil v\u00e6re under h\u00f8et og spise med og yngle. Man kan opbevare b\u00e6r i fryseren og man kan sylte. Kartofler kan gemmes i en flaminco kasse og st\u00e5 k\u00f8ligt. Den danske natur giver ikke rigtig mulighed for at h\u00f8ste flere gange \u00e5rligt, som man fx kan i varmere lande.<\/li>\n<\/ul>\n\n\n\n<p><strong>Sheree:<\/strong> Hvad g\u00f8r I for at sikre jer, at der er r\u00e5varer, der kan h\u00f8stes i de kommende s\u00e6soner?<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Vi planl\u00e6gger om efter\u00e5ret hvad vi vil dyrke kommende \u00e5r. Vi g\u00f8der om efter\u00e5ret og besk\u00e6rer frugttr\u00e6er. Vi indsamler nogle fr\u00f8 hos os selv. Vi k\u00f8ber ogs\u00e5 fr\u00f8 og fx l\u00f8g i god tid. Vi t\u00e6nker meget over hvordan \u00e5ret gik og hvad vi tror p\u00e5, at vi kan n\u00e5 og overkomme til n\u00e6ste \u00e5r. Dette for at mindske smitterisiko. Hvis h\u00f8ns bliver syge skal de slagtes, s\u00e5 vi passer p\u00e5 dem. Vi bruger str\u00f8else i h\u00f8nsehuset, der skal holde huset t\u00f8rt. Fx s\u00e5 spiser biller og b\u00e6nkebidere snegle\u00e6g hvilket mindsker m\u00e6ngden af snegle. Myrer er vigtige, da de kan holde fx \u00e6bletr\u00e6er\/frugttr\u00e6er fri for sygdom, s\u00e5 ikke noget med at fjerne myrer. P\u00e5 sigt kunne vi godt t\u00e6nke os at f\u00e5 skovmyrer, da de kan s\u00f8rge for frugten ikke f\u00e5r s\u00e5 mange sygdomme. Da h\u00f8nsem\u00f8j er meget st\u00e6rk og ikke bare kan bruges ufortyndet, laver vi en beholder hvor vi blandet m\u00f8j med vand. Det skal st\u00e5 en m\u00e5ned og s\u00e5 fortyndes yderligere inden vi vander med det. Vi virker fint, men man skal passe p\u00e5 ikke at g\u00f8de for meget. Man beh\u00f8ver ikke v\u00e6re uddannet landmand for at g\u00f8re det muligt at dyrke sine egne r\u00e5varer, enten kun for eget forbrug eller en mulighed for at tjene penge fra det.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Vi tror faktisk at en del har vejboder med gr\u00f8ntsager som de selv har dyrket. Folk kan gerne lide at k\u00f8be gr\u00f8ntsager fra private. Vi har v\u00e6ret i dialog med fx K\u00f8benhavns kommune og flere andre specialbutikker, der gerne vil k\u00f8be vores produkter. Vi t\u00e6nker at det kommer lige med tiden, n\u00e5r vores frugttr\u00e6er giver mere frugt.<\/li>\n<\/ul>\n\n\n\n<a href=\"\/\/eng.mst.dk\/\">Biodiversity<\/a>\n\n\n\n<div style=\"height:12px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<a href=\"\/\/www.organicdenmark.com\/about-organic-denmark\">Organic Denmark<\/a>\n\n\n\n<!--nextpage-->\n\n\n\n<p>Vivi Hjort Hansen and her husband Henrik had a dream of being self-sufficient. When they had the opportunity to buy Tofteh\u00f8j in Herlufmagle in 2019, the fulfillment of their dream took place. One of them is to cultivate the most common fruits and vegetables in the field. The ground is big enough to be able to produce food for their own table and for other people, so the plans of selling their organic harvest materialized shortly after moving in. Since they are small farm owners, it is advisable to practice the manual production of farming and without any use of pesticides or chemicals that could eventually harm not only their harvest, but also the animals and the ground water. The couple uses only small truck machines in maintaining the farm like when cutting the grass. As organic farmers, they also prefer organically cultivated ingredients when buying food from outside. <\/p>\n\n\n\n<p class=\"has-medium-font-size\">Through good planning and research, a decision was made to take the actions of achieving the certification of organic products, the Danish organic label, which is the most trusted in Denmark. One will be issued a license after three years of conducting strict monitoring of both the size of the land in connection with the number of animals in the farm. The Danish Veterinary and Food Administration, <a href=\"https:\/\/en.fvm.dk\/\">DVFA<\/a>, deals with food health and safety issues from farm to fork. They have the authorization under the following government agencies namely: <\/p>\n\n\n\n<ul class=\"wp-block-list has-black-color has-very-light-gray-to-cyan-bluish-gray-gradient-background has-text-color has-background\">\n<li class=\"has-medium-font-size\"><a href=\"https:\/\/fvm.dk\/foedevarer\"><strong>F\u00f8devarestyrelsen<\/strong><\/a> (the Danish Food Agency)<\/li>\n\n\n\n<li class=\"has-medium-font-size\"><a href=\"https:\/\/fvm.dk\/landbrug\"><strong>Landbrugstyrelsen<\/strong><\/a> (The Danish Agricultural Agency)<\/li>\n\n\n\n<li class=\"has-medium-font-size\"><a href=\"https:\/\/fvm.dk\/fiskeri\"><strong>Fiskeristyrelsen<\/strong><\/a> (The Danish Fisheries Agency)<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<p>Vivi and Henrik received the Danish organic certification in 2023 and their marketing efforts got even stronger. Even though they only produce a limited amount of harvest like marmalade, concentrated fruit extracts (juices), eggs, apples and a few variety of vegetables, their reputation in the local area is very good. <strong>&#8220;They have the most tasty organic eggs in the area,&#8221;<\/strong> said many of the consumers. Some of the vegetables grown in the farm are squash, kale, blue and green beans, edamame and ying yang beans, red beet root, potatoes and onions. While strawberries, raspberries, blueberries and rhubarb, black currant are sold frozen after the summer season. &#8220;Eat what is in the season&#8221;. Since Denmark is not a tropical country, good planning is important if you wish to have a good harvest, and even then, the amount of harvest depends a lot on the weather. This year, summer has been quite warm and long, but also dry. Still, it has been possible to have a good harvest on some crops and fruits. You will not always get the same result every harvest and that means, one should be prepared that there might be some periods where a farmer&#8217;s expectation could not be met.<\/p>\n\n\n\n<p>Their organic apple orchard of four hectares has ten different types of apples. The trees don\u2019t necessarily need to be taller than 2.5 meters. They can only be fed using organic food that is produced exclusively in the farm itself to maintain their certification and to avoid the risk of sickness. The couple are diligently maintaining their farm everyday, like removing weeds or cutting the grass before planting. In this way, they can also avoid pests in their crops. Every 9th week, a sample test should be sent to the authorities for salmonella treatment plan, conducted by the Danish Agriculture and Food Council (Landbrug &amp; F\u00f8devarer).<\/p>\n\n\n\n<p>It is only a two-man farm that demands a lot of energy and time to maintain, but for Vivi and Henrik, it is what they love to do and spend their day with.
